Who doesn’t love a quick weeknight dinner? I know I do, especially since the pandemic hit and work at the hospital has been crazy. In the beginning of all of this I stumbled upon Kevin’s Natural Foods Heat & Eat Entrees at our local Whole Foods and later learned about their sauce packets. These were perfect for those days where I would come home completely exhausted and just wanted to go right to bed. A hearty, nutritious, and gluten free dinner was done in five minutes (no, really!) with the help of these entrees and frozen rice or riced cauli.
We became instant fans of Kevin’s Natural Foods and I was extremely thankful for them. Recently I was asked if I wanted to participate in a recipe contest using some of Kevin’s Natural Foods sauces, I immediately said yes! It has been quite a while since I have participated in a sponsored event (post), and these are products that we use often, I couldn’t say no.
Have you heard of Kevin’s Natural Foods? There hasn’t been a flavor that we have tried and not liked. ALL of their products are certified gluten free by the Gluten Intolerance Group. Additionally, they are Paleo and Keto friendly and many of their products are also dairy free!
When picking the sauces I wanted to use, I had a few ideas for each floating around in my head. I chose the Lemongrass Basil Sauce and immediately thought of meatballs. I took the basic ingredients from my pork & shrimp sliders, made a few simple adjustments, and turned them into meatballs…a delicious dinner done in less than 30 minutes! You could easily make these as an appetizer for your upcoming holiday celebrations as well; just serve the extra sauce on the side as a dip! Not a pork or shrimp eater? No problem, just sub in some ground chicken or turkey in equal amounts. Dinner really does not have to be complicated, but it does have to be delicious.
