Five Ingredient Lemongrass Meatballs


Who doesn’t love a quick weeknight dinner? I know I do, especially since the pandemic hit and work at the hospital has been crazy. In the beginning of all of this I stumbled upon Kevin’s Natural Foods Heat & Eat Entrees at our local Whole Foods and later learned about their sauce packets. These were perfect for those days where I would come home completely exhausted and just wanted to go right to bed. A hearty, nutritious, and gluten free dinner was done in five minutes (no, really!) with the help of these entrees and frozen rice or riced cauli.

We became instant fans of Kevin’s Natural Foods and I was extremely thankful for them. Recently I was asked if I wanted to participate in a recipe contest using some of Kevin’s Natural Foods sauces, I immediately said yes! It has been quite a while since I have participated in a sponsored event (post), and these are products that we use often, I couldn’t say no.

Have you heard of Kevin’s Natural Foods? When picking the sauces I wanted to use, I had a few ideas for each floating around in my head. I chose the Lemongrass Basil Sauce and immediately thought of meatballs. I took the basic ingredients from my pork & shrimp sliders, made a few simple adjustments, and turned them into meatballs…a delicious dinner done in less than 30 minutes! You could easily make these as an appetizer for your upcoming holiday celebrations as well; just serve the extra sauce on the side as a dip! Not a pork or shrimp eater? No problem, just sub in some ground chicken or turkey in equal amounts. Dinner really does not have to be complicated, but it does have to be delicious.

Five Ingredient Lemongrass Meatballs

Flavor packed dish made in less than 30 minutes with the help of Kevin's Natural Foods Lemongrass Basil Sauce

Equipment

  • Large Skillet
  • Large Mixing Bowl
  • Chef's Knife
  • Cutting Board
  • Food Processor

Ingredients

  • 1 lb Ground Pork
  • 1/2 lb Shrimp cleaned
  • 2 Tbs Cilantro chopped
  • 2 Tbs Green Onions chopped
  • 1/2 tsp Black Pepper
  • 1 Tbs Avocado Oil
  • 2 Pouches Kevin's Natural Foods Lemongrass Basil Sauce

Instructions

  • In a large bowl, add ground pork
  • In a food processor, add shrimp (cleaned, tails off) and pulse until a paste forms
  • Add shrimp to mixing bowl with pork, add chipped cilantro and green onions. Add two tablespoons of Lemongrass Basil Sauce. Season with black pepper and mix well until evenly incorporated
  • Heat avocado oil in large skillet over medium heat
  • Evenly divide meat and form 16 meatballs (about two tablespoons each), sear meatballs on the first side for 3-5 minutes until evenly browned. Flip and repeate on the other side
  • Add two packets of Kevin's Natural Foods Lemongrass Basil Sauce, cover pan and simmer for 5-7 minutes or until internal temperature of the meatballs reads 165°F
  • Serve with riced calui, rice, vegetable ribbons, etc.
